A late, quick and easy menu this week.
Monday: Tomato and Sausage Risotto
Tuesday: Chicken Tamales
Wednesday: Chili, either here at home, or at the local high school chili cookoff
Thursday: see below
Friday: Pizza–Thai pizza for me, pepperoni for the kids
Saturday: Another Thanksgiving meal, with friends, menu to come later
I am hosting Thanksgiving as usual. My dad is coming over in the morning to cook the turkey on the grill with the boy, but I will be doing plenty of cooking. Here is what I am thinking:
Carmelized Onion-Butternut Roast with Chestnuts
Roasted purple potatoes
Roasted brussels sprouts
Cranberry sauce–the kind my grandma always made with jello and crushed pineapple and pecans and an apple
Steamed green beans
Turkey gravy
Nutmeg mushrooms–even thought I am the only one who likes them
Tropical sweet potato casserole–based on this recipe, but made into a casserole with mashed sweet potatoes
Desserts–not determined, but I am thinking a pumpkin pudding, a chocolate pecan pie, or pumpkin cheesecake.

I love that butternut squash dish. I always make it with extra squash and without the beans – textural issue for me, even though normally I love beans!
Last year I made it with walnuts instead of chestnuts, and a cranberry pumpkin seed bread instead of the beans. It was really good, but since I am not doing gluten now, I won’t be doing that again…
